Hi, let me introduce myself. My name is Jim Gallagher. I am an American/ Irishman & now reside near Glenties, which is known as the "Gateway to the Rosses". It is situated in the Gaeltacht, which is a native Irish speaking area of North West Ireland in County Donegal. The countryside here is spectacular, beautiful and the most pollution free area in Europe. I look out of my window each morning overlooking the Gweebarra bay and feel that God has really blessed me. I came here from Miami in the late 80's to retire and while a few American friends were staying with me I accidently discovered the product you are now viewing, while sitting out on the deck on a beautiful August evening having a BBQ and a few beers!

I discovered that I ran out of charcoal and not wanting to drive to the nearest town I quickly got out my handsaw and cut up a few turf (peat) and began to cook a loin of pork with it on the BBQ....

O Boy ! what a taste, what a rich full flavoured aroma was obtained, and while we all tucked in to the loin my friends said "you gotta do something with this product" and I did!. I set up Irish Smoke and now export the product worldwide, mostly to North America. The testimonials are there for you all to see.
