A Fire of Turf by Winifred M Letts

In summer time I foot the turf
And lay the sods to dry;
South wind and lark's song,
And the sun far up in the sky.

I pile them on the turf stack
Against the time of snow;
Black frost, a gale from the north,
Who minds what winds will blow?

Now winter's here, make up the fire,
And let you bolt the door.
A wind across the mountains,
A draught across the floor.

I'll not be heeding cold or rain,
Or moaning of the wind;
With the turf fire, the hearth stone,
The notions in my mind.

I've seen a power of years itself
That's gone beyond recall;
The leaves of spring, the days of youth,
Where are they now at all?

The wither'd leaves lie in the glen,
The days of youth are dead;
Now it's long nights and long thoughts
While the sods o' turf glow red.

I see myself a barefoot child,
I see myself a lad,
When the gold upon the gorse bush
Was all the gold I had.

I do be having fine old dreams
Of days were long ago,
When the wind keens, the night falls,
And the embers glow.

My wife Mary and I are not barbecue aficionados but we do barbecue frequently. We just use gas grill which works fine except it sometimes gets boring even though it's convenient. However, on the recommendation of a close friend, we decided to spice up our cooking and tried Magical Peat!! Unbelievable, not only did it smell great, the food tasted better than ever. Even our neighbours noticed the smell and wondered what we were cooking. We just put some magical peat chips on the gas burner coals. Incredibly simple but what a difference! Later on we even tried the peat candle, which was very pleasant & did keep the bugs at bay! We can't thank magical peat enough for such a great product. We would recommend it highly to anyone who wants to " kik it up a notch"! Warmest regards,

It's all here!!  I received the last of the shipments.  Thanks so much.  I received the mini-sods on Friday.  I  absolutely love the GOO!!  I slow cooked some pork along with the peat chips and it was heaven.  By the way, I really love the peat incense cones as well.  They burn beautifully. One thing to mention though, I placed the first cone in the microwave for two minutes as the instructions stated.  It burst into a massive ball of flames after approximately 55 seconds. LOL!  I thought you might want to know. My microwave is 1200 watts so maybe that has something to do with it.  I now do it for 30 seconds and it works perfectly.  Afterwards, I had a good laugh when I read your instructions again.  The following line took on a whole new meaning for me..."kick back with three fingers and enjoy the real smokey smell of back home."

I tried your Magical Peat this weekend. I used it to smoke a roast of prime Alberta beef. Here in Alberta we have a saying "If ain't Alberta, it ain't beef". It was a great combination. Sort of reminiscent of Laphrong Scotch. I enjoyed my sample. I only used one of the pucks & the aroma lasted for several hours. Thank you very much. I will save the others for special occasions!

Dear Mr. Gallagher,
Through a friend who visited Ireland this year I came by a quantity of your Magical Peat product. I have enjoyed cooking & serving the meats barbecued with it. We find it especially good for cooking wild game. Duck & venison loose that strong game taste & get a rich "Magical peat" aroma & flavour. We have been asked by friends, including a restaurant owner, to share our small remaining supply but have only enough left to do our thanksgiving turkey. Please send a box of Magical Peat to as ASAP & advise where in the States ( East Coast) we might be able to purchase this "good cooking" product.

Hi Jim,
Just got the 1st word back about magical peat - my hunter/food - Smoking Friend loved it - couldn't say enough good things about it (and he Speaks his mind). My uncle in Rye and I have not tried it yet, but we will (with Big Greg - probably) this weekend coming. I am your biggest believer!

Living in the south, we place great importance in grilling outside year round and for years I have used everything from hickory chips to mesquite for smoking, but no more!
